Grilled Teriyaki Chicken Skewers

Ingredients:

Teriyaki Sauce

  • 1/2 cup soy sauce

  • 2 tablespoon water

  • 2 tablespoon rice vinegar

  • 1/4 cup light brown sugar

  • 3/4 teaspoon garlic powder

  • 1 teaspoon corn starch

Remaining Ingredients:

  • 1 1/2 - 2 pounds chicken

Directions:

  • In a small sauce pan, combine all teriyaki ingredients

  • Whisk until combined

  • Cook over medium heat to dissolve sugar

  • Continue whisking gently until bubbles form and mixture thickens

  • Remove from heat and transfer to a clean bowl to cool

  • Slice chicken breasts into 1/2 inch strips

  • Place chicken strips in ziploc bag and add 1/2 cup of the teriyaki sauce

  • Keep 1/4 cup of teriyaki sauce to glaze with after grilling

  • Marinate chicken for 1 hour or overnight

  • Soak bamboo skewers in cold water for at least 30 minutes

  • Skewer chicken strips with prepared bamboo skewers

  • Grill for 3-5 minutes on each side or until done

  • Brush reserved teriyaki sauce over cooked chicken
