1 tablespoon light soy sauce (sub regular soy sauce if needed)
1 teaspoon sesame oil
1 teaspoon sugar
Lo Mein:
4–6 ounces uncooked mein noodles

1–2 tablespoons mirin
Directions:
Combine all sauce ingredients into a bowl and mix well
Cook the noodles according to the package directions
Drain noodles and set aside
Heat the sesame oil in a large skillet or wok
Add the green onions (white parts) and vegetables to hot skillet / wok
Fry until fork tender (about 4-5 minutes)
Add mirin to loosen up any brown bits off the bottom of the pan
Add cooked noodles and about half the sauce
Toss to coat
Add more sauce if needed. You are looking for a medium brown color
Serve topped with remaining green onions
